Eagle’s Trace Appoints Ruben Perez as Director of Dining Services

Eagle’s Trace retirement community appointed Ruben Perez as Director of Dining Services.

Mr. Perez brings more than twenty years of experience in the hospitality industry with the Four Seasons Hotel, Aramark Healthcare and the Cheesecake Factory Restaurant.  

As Director of Dining Services for Eagle’s Trace, he will oversee 140 employees and the operation of restaurants featuring diverse dining offerings from formal to casual in both the independent living and extended care neighborhoods.  

“We extend a warm welcome to Ruben as he shares his culinary creativity with residents and employees,” stated Stephen Aigner, Executive Director of the Erickson Living retirement community located in West Houston.  “The community recently rolled out our signature dining initiative that places an emphasis on all new cooked-to-order menus, prepared to taste.  This brings a true restaurant experience to residents which Ruben has greatly enhanced in his time with us so far.”

With a variety of healthy menu options, Eagle’s Trace serves approximately 1,000 meals per day to residents, employees and guests.  The Dining Services Department also includes the catering event team, a carry-out delivery service for residents and the Audubon Market that provides a convenient, on-site shopping locale.  

In November, Eagle’s Trace unveiled two additional dining venues, Stetsons Restaurant and the Oleander Lounge, which will provide the community its first outdoor dining opportunities.  They are located in the new independent living building, Amarillo Terrace.  

Originally from California, Mr. Perez lives in Spring with his two daughters.  He graduated with a degree in food service management from the California Culinary Academy and maintains membership with American Culinary Federation.
